Pineapple Cranberry Jam

1/2 Pineapple
1 Bag cranberries washed and boiled
1 package pectin

Blend in vitamix, boil with pectin, process 10 min in boiling water canner.

Garlic Butter

Butter, softened
Garlic
Parsley
Bread crumbs
Salt

Blend Garlic and parsley to a finely chopped paste
Mix by hand in to butter

Tomatillo Salsa

Lots of tomatillos, boiled with garlic cloves
1-2 bunches cilantro
1 onion
1-3 jalapenos
Salt

Boil tomatillos with garlic until they change color and burst when poked.
put everything in blender and blend until smooth

Potato Leeky Soup

Yum!  Dave's new favorite.

1 pound leeks, chopped
1 huge potato or a few small ones, cubed
1 box chicken broth
italian seasonings & janes mixed up salt
butter
little milk or cream
bacon, crispy and crumbled

cook leeks in butter until they start to soften and smell good
add broth and potato
cook until potato is soft, then blend some in the immersion blender
add milk or cream, seasonings and boil
add bacon on top when serving.
