Dough for empanadas

1 kilo harina
1/2 kilo manteca
1/2 cup/6tsp coca cola
1 tsp baking powder
6 tsp sugar
salt
warm water

Dough for bunuelos

1 kilo harina
1/4 kilo manteca
warm water
pinch of salt
vainilla

mix harina and manteca, slowly add water a little bit at a time

Garlic Noodles

1/2 bag curly noodles cooked
butter/flour/chicken broth to make a thick rue, season with herbs and spices
chicken breast cubed and cooked
veggies cooked
add garlic to sauce, cook to release flavors
add noodles, chicken and veggies, toss to coat

Apple-y Bread

2.5 cups flour
1.5 tsp baking soda
3/4 cup sugar
1/4 cup brown sugar
1.5 cups apple sauce
2 cups chopped apples
1tsp cinnamon
1tsp apple pie seasoning 4 eggs
2 tsp vanilla
**you could also add a cup of chopped pecans or raisins.


Preheat oven to 325
Beat everything together until it makes a nice batter.
Pour in to bread loaves, a little over 1/2 full.
Bake 30-40 minutes, until it firms up.
Cover with foil once cool to retain the moisture

spaghetti squash with lemon caper

1 Spaghetti squash
Little oil
S & p
4 Tblsp butter
3 Tbsp capers
1/2 cup zucchini
1/2 Cup peppers
1/2 Cup tomatoes
1/4 Cup lemon juice
Few basils leaves

Cook 400 degree oven, slices in half, scooped out seeds, rubbed with oil and s & p.  Bake cut side down, til soft.

Cooked veggies in butter.  mix all together when squash is cooked.

Sausage soup

1/2 Link Polish sausage, sliced and grilled to cook off some fat
4 potatoes slices and browned in the oven
1/2 bag cooked trader joes tortellini
2 stalks celery
2 carrots
2 small onions
few cloves garlic
1 can chickpeas
1/2 can lentils
2 boxes chicken broth
spices

chop veggies and boil in broth, when cooked, add beans, potatoes, sausage and tortellini

Stuff sliced lemon, and sage stems season and brown in butter.  Pour off butter and add milk and lemon peel.  Bake at 374 for hour and half.

Colcannon

Ingredients

  • 3 pounds potatoes, scrubbed
  • 2 sticks butter
  • 1 1/4 cups hot milk
  • Freshly ground black pepper
  • 1 head cabbage, cored and finely shredded
  • 1 (1-pound) piece ham or bacon, cooked the day before
  • 4 scallions, finely chopped
  • Chopped parsley leaves, for garnish

Directions

Steam the potatoes in their skins for 30 minutes. Peel them using a knife and fork. Chop with a knife before mashing. Mash thoroughly to remove all the lumps. Add 1 stick of butter in pieces. Gradually add hot milk, stirring all the time. Season with a few grinds of black pepper.
Boil the cabbage in unsalted water until it turns a darker color. Add 2 tablespoons butter to tenderize it. Cover with lid for 2 minutes. Drain thoroughly before returning it to the pan. Chop into small pieces.
Put the ham in a large saucepan and cover with water. Bring to the boil and simmer for 45 minutes until tender. Drain. Remove any fat and chop into small pieces.
Add cabbage, scallions, and ham to mashed potatoes, stirring them in gently.
Serve in individual soup plates. Make an indentation on the top by swirling a wooden spoon. Put 1 tablespoon of butter into each indentation. Sprinkle with parsley.

Oatmeal Bars


1 egg
2 tblsp sugar
1/2 cup milk
1/2 cup applesauce
1 1/2 cup oats
small handful dried cranberries
small handful chopped nuts
cinnamon
1 tsp baking soda
pinch of salt
a few chocolate chips to go on top


Bake at 350 for 20-25 min

Sprouted Quinoa

Need to find ways to use this!

1/4 cup quinoa in a mason jar and cover top with cheesecloth. Secure with metal ring or rubber bands. Fill jar with water and let quinoa soak overnight. Drain. Rinse quinoa with water and drain twice a day for up to 2 days, until roots are about 1/2-inch long. (Quinoa should not dry out completely.) Once sprouted, rinse thoroughly and use immediately or transfer to an airtight container and refrigerate for up to 2 days. Makes 1/2 cup sprouted quinoa.

Veggie Burgers - hopefully I remember all the ingredients!

Blend/Shred-
1 can black beans
1 can chick pea
1 zucchini
1 squash
1 large carrot
1 small onion
few cloves of garlic
1 large pepper
1 small hot pepper
3 eggs
few tblsp gluten free flour
few tblsp bread crumbs
spices (salt, pepper, Italian seasonings, coriander powder, chili powder)

stir everything up, fry until the patty sticks together, and freeze.

whiskey eggnog cheesecake

Crust:1     tbsp. unsalted butter, softened
2     c. graham cracker crumbs
1     c. granulated sugar
1/2  tsp. ground nutmeg
1/2  c. plus 2 tbsp. unsalted butter, melted
Filling:5       8-oz. pkg. cream cheese, softened
1-1/2 c. granulated sugar
5       large eggs (room temperature)
1/4    c. Irish whiskey
3/4    c. eggnog
Topping:1   c. heavy cream
1   tbsp. powdered sugar
     dusting of ground nutmeg
Oven 325 F
I have found that a 10-inch non-stick springform pan is the best size for cheesecakes.
Preheat oven to 325F. Coat bottom and sides of a 10-inch springform pan with softened butter.
Using a fork, combine graham cracker crumbs, 1 cup sugar, nutmeg and melted butter in a medium bowl until well blended. Then evenly press crumb mixture onto the bottom and all the way up the sides of buttered pan. Set aside.
Beat cream cheese in a mixing bowl until smooth. Add 1-1/2 cups sugar and beat until smooth, scraping down sides of bowl as needed. Add eggs, one at a time, making sure to scrape sides after each addition. Beat until well incorporated and very smooth. Beat in Irish whiskey and eggnog until well mixed. Pour into prepared pan and bake in preheated oven for approximately 1 hour and 30 minutes or until center is the consistency of set gelatin. Do NOT remove it from the oven.
Turn off heat, place a wooden spoon in the oven door to keep it open just a crack and let cool in the oven for 3 hours. Remove from oven and finish cooling on a wire rack. Do NOT remove springform and refrigerate until ready to serve.
Just before serving, whip heavy cream with confectioners sugar. Slide a knife around the springform, remove it and place the cake on a plate. Garnish top of cake with whipped cream rosettes and dust with ground nutmeg.

Car Bomb Cupcakes

GUINESS CUPCAKES
1 bottle guiness
less than 1 stick melted butter
1/2 - 3/4 cup unsweetened cocoa powder
2 cups all purpose flour
2 cups sugar
1 teaspoons baking soda
2-3 large eggs
1/2 -3/4 cup sour cream

WHISKEY GANACHE
equal parts chocolate and heavy whipping cream
4 spoons whiskey or bourbon

BAILEYS FROSTING
Cream cheese
powdered sugar
baileys


Preheat oven to 350°F.
blend guiness and butter, add dry ingredients, then add sour cream
fill cupcakes 3/4 up

for ganache - microwave one minute, stir until smooth

Pipa's Crepes

Add 2 cups oatmeal 1 giant spoon = 1/8 of a cup
13 of splenda
7 giant tablesppons of flour 1 giant spoon = 1/3 cup
Add milk (Fill about 1/2 a large bowl), Mix continuously
Add 6 giant tablespoons of flour 1 spoon =1/3 cup
Add more milk and now fill up mixing bowl. Leave about 1/2" space on top
Total milk added isa about 3/4 of a gallon.
Continue mixing for about 4-5 minutes.
Add lemon peel for flavor.
Butter and cook on crepe pan. Low fire, cook 10 minutes on one side.
Flip, cook 2-3 minutes on the other
Add applesauce and jelly and roll.

Parmesan Chicken with Lemon-Caper Sauce

Parmesan Chicken with Lemon-Caper Sauce
Servings: 6
 
Ingredients:


  • 6 boneless, skinless chicken breasts


  • 1 stick butter


  • 1 cup plain dry breadcrumbs


  • 1/2 - 1 cup Parmesan cheese, grated


  • 1/4 teaspoon salt


  • 1/4 teaspoon black pepper


  • 2 tablespoons parsley, chopped
    Sauce


  • 6 tablespoons unsalted butter


  • 3 tablespoons capers, drained and rinsed


  • 3 tablespoons lemon juice


  • 2 tablespoons parsley, chopped


  • salt and pepper
Preparation:
Preheat oven to 350°. Mix breadcrumbs, parmesan cheese, salt, pepper, and parsley on a plate. Put melted butter in a bowl. Rinse and dry chicken, then dip in butter and roll in breadcrumbs. Place in a baking dish and bake for about 35-45 minutes, depending on size of chicken breasts; 60 minutes for split-chicken breasts.
Meanwhile, prepare sauce. In a small saucepan, melt butter until slightly brown and nutty. Add capers, cook 3 minutes. Add lemon juice, parsley, salt and pepper to taste. Keep warm and serve over chicken.

ALOO KI TIKKI (SMALL POTATO PANCAKES) Edited for when I made it

4-5 big Potatoes
Green chillies, chopped 1-2
cilantro leaves, chopped a few sprigs
little bit of bread crumbs
salt to taste
Red chilli powder 1/2 tablespoon
corriander powder
garam masala
butter to fry

PEEL, then wash and boil potatoes,mash while still warm. Add green chillies, cilantro leaves, spices to the mashed potatoes and mix well.  Shape them into rounds. Heat shallow pan,  fry on both sides with butter till golden. Drain onto an absorbent paper. enjoy!

healthy chicken pot pie 1

INGREDIENTS

  • 3 cups fat-free chicken broth
  • 1 1/2 cups frozen green peas, thawed (pleeeeze don’t use canned peas!)
  • 1 cup (1/2-inch) cubed baking potato (I leave the peel on, but do as you please)
  • 1 cup (1/2-inch) cubed sweet potato (again, I like the peel for the extra fiber, but peel them if you choose)
  • 1 cup (1/2-inch) cubed celeriac (celery root)
  • 1 cup (1/2-inch-thick)slices parsnip
  • 1 (10 ounce) package frozen pearl onions (thawed)
  • 1 pound skinless, boneless chicken breasts, cut into bite-sized pieces
  • 2/3 cup all-purpose flour (about 3 ounces) divided
  • 1 1/2 cups fat-free milk (skim milk)
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh thyme 1 1/2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • Cooking spray
  • 1 sheet frozen puff pastry dough, thawed

PREPARATION

  1. Preheat oven to 400°
  2. Bring broth to a boil in a large Dutch oven.
    • Add peas and next 5 ingredients (through onions) to pan; cover, reduce heat, and simmer for 6 minutes.
    • Add chicken; cook for 5 minutes or until chicken is done.
    • Remove chicken and vegetables from broth with a slotted spoon; place in a large bowl.
  3. Increase heat to medium.
    • Lightly spoon flour into dry measuring cups; level with a knife.
    • Place all but 1 tablespoon flour in a medium bowl; gradually add milk to bowl, stirring with a whisk until well blended.
    • Add milk mixture to broth; cook for 5 minutes or until thickened, stirring frequently.
    • Stir in chicken mixture, parsley, thyme, salt, and pepper.
    • Spoon mixture into an 11×7-inch baking dish coated with cooking spray.
  4. Sprinkle remaining 1 tablespoon flour on a work surface; roll dough out and place over chicken mixture, pressing to seal at edges of dish.
    • Cut small slits into dough to allow steam to escape; coat dough lightly with cooking spray.
    • Place dish on a foil-lined baking sheet.
    • Bake at 400° for 16 minutes or until pastry is browned and filling is bubbly.
Note: You can substitute the frozen puff pastry with 2 or 3 sheets of Phyllo dough (add one quick spray of non-stick spray between sheets and to the top sheet).  Your results will be more like the pie pictured above.

rajas con crema

  • 5-6 poblanos
  • 1/2 of a large white onion, sliced into rings and then cut in half (to make half moon strips)
  • 2 tbsp salted butter (do not substitute margarine)
  • A third of a 15 oz. container of crema Mexicana or sour cream
  • About a half cup of coarsely shredded Chihuahua cheese
  • A pinch of salt if desired
cook in pan, yum!

Egg Curry

4 onions finely chopped
1/2 spoon tumeric
4 tbsp oil
3 green chili
ginger garlic paste
black gram
1 spoon red chili powder
salt
2 tbsp coconut powder
boiled eggs: take off shell and cut the top layer 3 times)

add ingredients until chili powder, and cook until onions are red.  then add salt and chili powder, continue cooking until onions are soft.  add boiled eggs and cook 10 min covered.  turn off heat and add chopped cilantro. 

Shirisha's tasty soup

2-3 big tomatoes, crushed by hand
4 green chilies, broken in half
2 spoons corriander powder
1 spoon red chili powder
salt
1 bunch cilantro

Boil this mixture for 15 minutes.  Once boiling, add cilantro leaves

In a frying pan, combine:
2 tbsp oil
cumin seeds
chopped garlic
little tumeric
little cilantro chopped

fry this mixture then add to soup

knead until a soft dough.  roll out in to small circles and fry in a hot pan until lightly browned
